Mellow Corn is a straight corn whiskey produced by Heaven Hill Distillery. Unlike bourbon, which requires at least 51% corn, straight corn whiskey must contain at least 80% corn in its mash bill. Mellow Corn is aged for four years in used bourbon barrels, giving it a lighter color compared to bourbons aged in new charred oak. It is bottled at 100 proof and carries the Bottled-in-Bond designation, meaning it meets strict aging and production requirements.
